It started in a gas
station, but
the barbecue drew so much interest that it soon moved to a renovated
cottage with a big dining room. All the 'cue is cooked in real wood
smoke slowly enough for the flavor to penetrate thoroughly. The brisket
is sliced extra-thin. The pulled pork is tender and
moist, and makes a good barbecue sandwich. The spiciest item here is
the pork ribs; these carry a nice exterior bark. All of this is abetted
by a good homemade sauce. And something unique: smoked boudin. They buy
a well-made version of the rice-and-pork-stuffed Cajun sausage and put
it on their smoker for an hour or so. This is a great grab-and-go
snack. Abita Barbecue also does burgers and a
daily plate special.
