Calas Bistro and Wine Cellar, a fine dining restaurant just opened at 910 West Esplanade Avenue at Chateau Boulevard in Kenner, has preserved and enhanced the culinary pleasure of the traditional Creole treat called calas--as well as offering other exciting dishes, all created with the highest quality ingredients available from the waters and the land of South Louisiana. 

Calas are rice fritters, served hot and fresh. They were a staple in the 1800s and early 1900s in New Orleans when street merchants sold them from carts, stands, and baskets throughout the City. Sweetened and flavored with spices, they were most common as a breakfast or late-night treat. The word is African/Caribbean  in origin, as are many New Orleans cuisine terms, like gumbo and jambalaya.

In the new Calas Bistro and Wine Cellar, Executive Chef Jeffery Wagner, working with  consulting chef Frank Brightsen, created an exciting menu rooted in the cuisine of New Orleans. Calas are the centerpiece, but seafood, meats, sausages, vegetables, spices, and fruits will be used in dishes ranging from the well-known to new creations.    
 
Among the daily offerings will be shrimp shortcake, mustard fried catfish with tomato, red onion and roasted jalapeno tartar sauce, pulled pork sandwich on ciabatta bread with roasted jalapeno cole slaw, chicken Pontalba with ham, mushrooms, and béarnaise, Kobe beef brisket au jus with horseradish sour cream and garlic mashed potatoes, and pesto shrimp bisque.  Daily specials change with the season.

Calas are offered as appetizers, with shrimp, jambalaya, and pesto vegetable toppingsvariations with dipping sauces. Sweet calas will be offered as a dessert item.

Calas Bistro and Wine Cellar, as the name implies, will also feature wine and fine beverages. Bottles are displayed in a wine-shop way, at wine-shop prices. Customers can pick up the bottles to read the labels or otherwise inspect them before having them with dinner (with the payment of a small corkage fee) or taking them home. Also available are wine “flights” of several related wines by the glass to go through an entire evening's repast.

Calas Bistro & Wine Bar is available for special events on site on Tuesday.  Off site catering available anytime.
