The earliest restaurants in New Orleans were heavily influenced by the French culture of the city. But they deviated from classic French, because the ingredients found in Louisiana were different from those in France. And the two places were out of contact with their respective vogues. So was born Creole French cooking, which for over a century dominated dress-up dining around town. Antoine's was the first of the kinds, but succeeding generations saw Galatoire's, Arnaud's, and Brennan's in turn adding their own spins. All those are still here, slowly evolving. Meanwhile, many of the newer bistros have great luck mixing French recipes with New Orleans tastes and ingredients.
