The food my mother's generation cooked is only found in very lucky homes, where the residents have the time and inclination to cook dishes that often took hours. But even making the roux necessary for a many old-style Creole dishes might be too much for some would-be home cooks. And you have to be home all day to make red beans and rice or gumbo.
These restaurant have become popular by serving those and other homestyle dished. They usually do this in simple surroundings at low prices. But not always.
