Welcome to a highly selective collection of recipes, with a heavy emphasis on the Creole and Cajun styles. We are going not for numbers of recipes; there is no question that there are too many recipes out there already. These are the ones my readers, listeners and I have most enjoyed. Still, after all this time we've developed 635 of them--three cookbooks' worth.

Guarantee: Every recipe here has been tested in my own kitchen and written by my own hands. We don't even take recipes from restaurant chefs at face value, but try them out and word them in a consistent style to make them easy to use and understand.

Finding Recipes

There are two ways to look up a particular recipe. The first is to go down a list of the recipes in the category your dish belongs in. The list of categories is below. Although no two people would categorize dishes in exactly the same way, I think you'll find some logic in our list.

Click on any recipe category to go to a list of all such recipes. You can also do this from any page in the entire site by positioning your mouse over the word "Cook" in the blue menu bar under the Menu logo, and selecting from the drop-down lists of categories.

Another way to look up a recipe is to use the Search box above. You can look up a recipe not only by its name but also by any ingredient in it. There's a trick to it: think simple. Type the smallest piece of what you're looking for into the Search box.

Examples:

If you're looking for chicken andouille gumbo, search for gumbo.

For oysters Rockefeller, look for oysters (or even just oys), or Rockefeller (or just rock).

When you click on the Find Recipe button, a list of recipes and articles will come up, with the most likely options first.
