By Tom Fitzmorris Originally published December 22, 2005 Click here for the current edition Bon-Ton Comes Back For Lunch The Bon-Ton Cafe, the oldest Cajun restaurant in New Orleans, came back from hurrication Tuesday. They opened serving lunch only Mondays through Fridays (they have not been open on weekends in a long time). A message from Debbie Pierce (who runs the place with her husband Wayne) said that they were able to get seventeen of their former staff of forty back to work. That may sound sparse, but in fact it's a better percentage than most restaurants came back with. It also matters a great deal at the Bon-Ton more than in most places, since the staff there has longevity measured in decades more than years. © 2005 Tom Fitzmorris.
