By Tom Fitzmorris Originally published May 19, 2008 Danny Trace Off To Commander's Palace In Destin New Chef At Cafe Adelaide I wasn't happy to hear that Danny Trace would be leaving Café Adelaide for the new Commander's Palace in Destin, Florida. He took over as executive chef at the Brennans' restaurant in the Loew's Hotel on Poydras Street after the hurricane, and turned it from a just-okay place to one of the great places to eat downtown. Of course, Destin is a good gig. It's owned by Ti Martin and Lally Brennan, who were also his bosses at Café Adelaide and Commander's in the Garden District before that. So we wish Danny well. The new chef at Café Adelaide is Chris Lusk. He's an alumnus of Commander's, cooking there in the early 2000s. He comes directly from Vin Bistro in Austin. He also spent some time in New York, working with Mario Batali at Otto Enoteca. He's at Café Adelaide now, and has already made a few menu changes.
