Orange-Flavored Raisin-Pecan Cookies

These are very light cookies, both in texture and in the absence of added sugar. The natural sweetness of the orange juice and other ingredients is enough. Try to use very ripe oranges. Or mandarins. Because the recipe calls for golden raisins, even anti-raisin people like them.
  • 1/2 cup softened butter
  • 1 egg
  • 2 Tbs. grated orange rind
  • 1/2 cup fresh orange juice
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 cup finely chopped pecans or walnuts
  • 1/2 cup golden raisins
Preheat oven to 375 degrees.

1. In a bowl, beat the butter until it's very pale. Add the egg and continue to beat until well blended. Beat in the orange rind and orange juice.

2. In a second bowl, combine all the dry ingredients except the pecans and raisins. Add to wet ingredients and beat until well blended.

3. Stir in nuts and raisins. Drop dough by round teaspoonfuls onto a cookie sheet, two inches apart. Bake at 375 degrees for 20 minutes, or until lightly brown.

4. Cool on a wire rack. Store in a tightly-closed container.

Makes 2 dozen cookies.
