VACHERIE RESTAURANT OPENS IN THE HOTEL ST MARIE New Orleans, Louisiana - September 22, 2011 – Vacherie, a new restaurant, bar, and café, is now open in the Hotel St Marie at 827 Toulouse St. in the French Quarter. Named in tribute to the hometown of Executive Chef and Partner Jarred Zeringue, Vacherie celebrates the food traditions of south Louisiana’s German Coast, sourcing local produce, meats and seafood, and creating a modern interpretation of the German Coast’s recipes, a blend of Cajun, German, French Creole, and African influences. Vacherie’s Dining Room offers breakfast Monday – Friday from 7am-11am and brunch Saturday and Sunday from 7am-2pm, featuring such dishes as Boudin Benedict, Johnnycakes, and Eggs Lecaze. Dinner, from 6pm-10pm Monday – Saturday, offers such dishes as Black Iron Skillet Beef Tenderloin, Crawfish Etoufee, and Rabbit Cassoulet. Vacherie’s Bar, open from 4pm Monday – Friday and from 10am Saturday and Sunday, stocks a broad selection of spirits, interesting wines, and local beers. The bar’s Small Plates menu features such dishes as Shrimp and Avocado Ceviche, Pimento Cheese Gritcake over Smothered Collards, and Pork Sausage Sliders with House-made Pickled Onions. Vacherie’s Café, open every day from 7am-8pm, offers fresh home-made soups, salads, sandwiches, and pastries, plus a European-style espresso bar and coffee shop with a full range of coffee and tea drinks, juices, and soft drinks. In addition, on-site catering and private party rooms are available. Vacherie Restaurant’s principals are David Abner Smith, Doug Hary, and Jarred Zeringue.
